Bakery Operations Buddy

BOB is a service for artisan bakeries that uses sensors to turn existing equipment into smart devices, simplifying the HACCP documentation process and helping bakeries comply with European standards. Many local businesses struggle with these regulations due to a lack of digitalization and the high cost of specialized equipment, which can lead to the closure of local production and the decline of small-scale bakeries.

By enhancing efficiency without replacing traditional craftsmanship, BOB reduces the bureaucratic burden of HACCP procedures. While larger corporations have access to IoT technologies, small bakeries still rely on manual methods. BOB offers an affordable, digital solution that strengthens the sustainability of local bakeries and supports the local economy.

Identifying the Need

Since the early 2000s, the number of businesses in the country has steadily decreased, with half of them vanishing over the years. By the end of 2022, only 9,607 remained, highlighting the growing challenges faced by local businesses and the rapid shifts within the industry.





Field Research

We conducted an interview with an artisan bakery to document their baking processes and identify potential areas for optimization. In addition to analyzing the baking procedures, we also examined the interfaces of the machines. This information serves as the foundation for our process documentation and helps us optimize our own workflow.





To better understand the baking process, we decided to roll up our sleeves and bake bread ourselves. This hands-on experience gave us a deeper appreciation for the intricacies of the craft, allowing us to connect with the bakers' work on a personal level and gain valuable insights into the challenges they face daily.












Currently, managers are burdened with the task of checking everything separately and repeatedly, a process that takes time away from the core of their business—craftsmanship. This constant juggling of responsibilities not only slows down operations but also distracts from what truly matters: perfecting the craft. What’s needed is a seamless, centralized overview where all data is easily accessible in one place, allowing managers to streamline their tasks and artisans to focus on their work.
Current situation

Centralized system
The bakers are equipped with iPads that provide a wealth of insights at their fingertips. Sensors continuously record critical data such as temperature and humidity, ensuring the baking environment is always optimal. In addition to room overviews, deeper data insights are readily available, giving managers a clear understanding of the process. To further enhance efficiency, the iPad also features a task management tool, helping bakers and managers stay on top of their responsibilities without losing focus on the craftsmanship.
